The efficiency of the exercises depends on so many variables it is impossible to say which, if any, will work better for everyone.

Arguably it is the attitude of the enthusiastic photographer that is the most important yet of all the people who have discussed none have dismissed any project as being "harmful" to his/hers existing skills.

The Alphabet:
Not the easiest of projects but done correctly this makes a very interesting gallery. The project is pretty straightforward in itself, find instances of the letters of the alphabet in your immediate environment. A duration should be set that is pressing but not unfeasible (say 2-3 weeks).

A Photo A Day:
IMHO this is one a the best projects out there. You start by setting a duration for the project (a whole year is really popular) and continue to take one photograph everyday for that duration. While there are no rules of regulations for the type of photo it gets really difficult to find something new after a week or two. By the end of this project a plethora of different opportunities conditions and challenges will present themselves and dealing with them is a wonderful experience.

Photo Study:
In a photo-study you do the exact opposite to what you wish to achieve. By isolating a single subject and shooting it exclusively (for a week or so) you attempt to present it while bringing your style to it and adding realizing it as a special gallery. This way, like most "studies", if you pick a subject you find challenging by the end of your study you will be much more efficient in shooting it.
